Thursday evening, 10/17/13, continued....
Yesterday evening we had some neighbors over. I asked one of our neighbors, Steve, what he would like to drink. Well, as it turns out, he wanted some white wine. However, I had no white wine chilled, so I offered him a Pinot Rose which was chilling in the refrigerator. I have to say, we both enjoyed it very much. It is from Hawkins Cellars, Stormy Morning Vineyard, Willamette Valley, Oregon, 2012. As many of you know, wines from Oregon are becoming very well known and appreciated, especially Pinot Noirs.This was an especially yummy Rose.

Thursday evening, 10/17/13~
I made a large pot of chicken tortilla soup this evening. I had bought a rotisserie chicken from Costco yesterday and made a chicken salad with some of the chicken. However, there was plenty of chicken still on the bones. So I took the remaining chicken off the bones, cooked the bones in water to make a soup base then added:
Chopped onions, carrots and celery; 1 can of creamed corn; 1 can of pinto beans, 1 can of white beans, canned diced tomatoes. Spices to taste: garlic powder, salt and pepper, cumin powder, hot pepper flakes, cayenne pepper, 21 Seasons. Add the chicken which you had removed from the bones before cooking the bones. Let all ingredients simmer to blend the flavors. Just before serving, add strips of corn tortillas. Low fat and very yummy. Play around with this to suit your particular tastes.

Here is a photo from our camping trip of August 2013. We were at the Ripplebrook campground in the Mt. Hood National Forest. This was one of the best camping trips ever! Needless to say, I am not Miss Glamour. Robert (Chief Grey Wolf) gets up early and makes the campfire and gets the coffee brewed on the camp stove. I come crawling out of the tent, in my flannel nightgown and get greeted with a cup of coffee.

I'm new!
Hello, Friends, Family and new friends~
My name is Karen McKim-Altman. My 'camp name' is Princess Littlefeet. [Why? because I have little feet!] That is the name my husband gave me on one of our camping trips. I call him (Robert) Chief Grey Wolf. In future blogs I will post pictures; that will show you lovely readers how we got our names.
Looking forward to sharing things with you, topics including Politics; Religion; Food, Wine, Relationships; English grammar, spelling and punctuation; crafts/stamping; photography; humor; world events; music; preparedness; work; 'stuff' around the house, and so much more.
